Hanging out with friends! & Sause Soup recipe

Periodically we hope to post pictures from our hangouts with friends to help put faces with names for family who haven't met all our friends.  Unfortunately we are just getting used to remembering to take pictures.  However we did remember to take pictures with friends a few times this winter break!  We are making a strong effort to be more conscious of taking pictures when hanging out with friends and we will introduce them on our blog as we get those pictures!

Most recently we had our Chinese friends, Richard and Li Li (center), and Jason and Jessica (Right) over for dinner.  Most of these names are their English names as Jenna and I still struggle with even names in Chinese.  We met both of these married couples at a weekly lunch last semester called "Crossroads" held at the BSM at UT campus.  For dinner we had sausage soup. I used my (Jenna) mom's recipe that I grew up eating.

Here is the recipe for my mom's (Kim Erhart) sausage soup. This soup is more like a chowder or stew. It is very chunky and hearty. Different style beans/other veggies can be supplemented.


Sausage Soup

1-2lb sausage cut into pieces
1 onion chopped
3 stalks celery chopped
1 cube chicken bouillon
1 can pinto beans
1 can ranch-style beans
1 cup water
1 (14.5oz) stewed tomatoes
1/2 tsp. cumin
1/2 tsp. thyme
1 bayleaf
1/2 tsp. tabasco
2-4 potatoes (baked in microwave, and skinned if you want)

Brown the sausage and onions. Add the rest of the ingredients except for the potatoes. Simmer for about 20 minutes. After you bake the potatoes, cut them into bite-sized chunks. Add potatoes, simmer about 10 more minutes.
